Thanksgiving Lunch

James’ parents and our nephew Dawson came to our house for Thanksgiving this year. We had a great meal. The entree was a fully-cooked spiral sliced ham I picked up at Costco that was heated and glazed. Side dishes were Green Bean Casserole, Baked Macaroni and Cheese (source: Alton Brown and the Food Network), Maple Sweet Potato Puree with Caramelized Onions (source: Claire Robinson and the Food Network), and Glazed Carrots with Rosemary (source: Taste of Home Holidays & Celebrations 2009) and Pillsbury Grands Biscuits. The Green Bean Casserole was a hit as always. The baked mac and cheese was tasty, but James says he prefers Velvetta Shells and Cheese. The sweet potatoes weren’t bad, but I’m just not a big sweet potato fan, but maybe I’ll find a recipe that makes me like them. The carrots were good, but the rosemary was a tad overpowering.

Of course, my favorite part of Thanksgiving is the pies. I tried a new pie crust that was oh so delicious. I will definitely be using it again.

Alton Brown’s Buttery & Flaky Pie Crust

Source: Pear Cranberry Pie

Ingredients:

  • 6 ounces unsalted butter, cut into 1/2-inch pieces
  • 2 ounces vegetable shortening, cut into 1/2-inch pieces
  • 5 to 7 tablespoons water (or juice that complements pie filling)
  • 12 ounces all-purpose flour, about 2 3/4 cups, plus extra for dusting
  • 1 teaspoon salt (I use kosher salt)
  • 1 tablespoon granulated sugar

Directions:

Place the butter, shortening and water into the refrigerator for 1 hour.

In the bowl of a food processor, combine the flour, salt and sugar by pulsing 3 to 4 times. Add the butter and pulse 5 to 6 times until the texture looks mealy. Add the shortening and pulse another 3 to 4 times until incorporated.

Remove the lid of the food processor and sprinkle in 5 tablespoons of the water. Replace the lid and pulse 5 times. Add more water as needed, and pulse again until the mixture holds together when squeezed. Weigh the dough and divide in half. Shape each half into a disk, wrap in in plastic wrap and refrigerate for at least 1 hour and up to overnight.

Yield: 2 one-crust pie shells or 1 two-crust pie

I made two one-crust pies with this pie dough. The first was a Texas Pecan Pie (source: Taste of Home Recipe finder), that was slightly different from my normal pecan pie recipe. It was tasty, but a little too liquidy for my liking.

The second was a Pumpkin Chiffon Pie (source: Taste of Home Holidays & Celebrations 2009) that was definitely delicious, but it is not the perfect pumpkin pie. Of course, part of that could have been I was distracted while making the pie and so it didn’t end up looking quite like it should.

Jessica’s Enjoying her Bath

Jessica has begun to enjoy her bath time, or at least not hate it. We discovered the reason she hated bath time. Her parents are noobs. We were so concerned that the water would be too hot, the water was not warm enough and Jessica cried so much because she didn’t like taking a cold bath. I don’t blame her. I don’t care for cold baths, unless I’m really hot, which occasionally occurred when I was pregnant with Jessica.

Jessica’s Baby Quilt

Jessica’s baby quilt has a long history. I started it in September 2006 with the intention of giving it my friend who had a baby in February 2007, but I didn’t finish in time for her baby shower and got her something else. Then I intended to finish in time for the birth of my nephew in March 2008, but I didn’t finish in time and got him a different baby gift. At that point James told me I should just plan on finishing it for whenever we were going to have a baby. Now, keep in mind, he told me this before we even starting trying. So I’d work on here and there. A lot of the time spent working on it was long car trips to Midland. Then we found out we were pregnant in February and I kicked my butt into high gear. I finished it in June. But I put the finishing touch of Jessica’s name, birthday, and birth weight at the bottom of the quilt this week.

One Month Old

Last weekend my parents came into town. They stayed at my brother’s house, but they spent a few hours when they first arrived with Jessica and I. My Dad hadn’t seen Jessica since she was 1 day old.

We then met up with everyone for dinner where Jessica sucked on her pacifier (since she had gotten fussy in the car) and then fell asleep. She took such a nice nap, we even did a quick stop in the grocery store on the way home. Although, I have to say HEB’s carts aren’t ideal for a baby carrier, so until she gets bigger I won’t be able to go to HEB with just her.

She much prefers her bouncer to her swing, but as long as she is very happy when put in the swing, she’ll enjoy it and even fall asleep in it.

Doesn’t Jessica look like she’s praying in this next picture? It was taken after a diaper change, so maybe she’s praying that that Daddy will be faster at flying her in for a milk pick-up. James has taken to flying Jessica to me and she really seems to enjoy it. I need to get a picture of it.

On Sunday, we met up with my parents and my brother’s family for lunch to celebrate Julia’s birthday, who hit the quarter century mark. Don’t Aspen and Jessica look cute together? I can’t wait until they both get bigger and can have play dates.

On Monday, Jessica became one month old. Time is certainly flying by. She is rapidly growing. The Gerber brand 0-3 month onesies are now too short, although the Carter newborn onesies are still long enough, but not for much longer. Jessica enjoys eating and can be quite the noisy eater. Sometimes, she gets so excited to eat and will gulp so much that she almost causes herself to choke. She is starting to be more alert during the day and enjoys kicking on her tummy time mat both on her back and on her stomach. She can keep herself occupied for quite some time in her bouncer, which is great since that allows me to eat lunch or get dressed. Jessica is a good sleeper, albeit an often noisy sleeper. She has consistently been going to bed in the 9-10 o’clock hour, waking up around 2:30 AM and then again between 7:30 and 8:30 AM. Although last night, she didn’t wake up until 5 AM and then 9 AM, which made me pretty happy. Although, if I had known she was going to sleep that long I would have put a doubler in her diaper and prevented James from changing the crib sheet at 5 AM.

As a side note, at my postpartum check-up at the OB’s office earlier this week, I’m 6 pounds shy of my pre-pregnancy weight. Of course, since I only gained 30 pounds, I lost a third to half of that weight by the time we went home from the hospital.

Happy Baby

We’ve started using a pacifier some this week. The main time it gets used is when Jessica wakes up crying and I want to calm her down while I change her  diaper before feeding her. This is especially useful because then she won’t wake James up too. You might question me wanting to allow James to keep sleeping, but he is going to work and I get to take naps with Jessica during the day, so I figure James deserves to sleep during the night. Outside of diaper changes, especially when I set her back in the crib while I wash my hands, she doesn’t seem too interested in the pacifier. But look her hand works quite well! This was taken while she was napping.

On Tuesday, Jessica had an ultrasound performed on her hips. This is a common precautionary test for breech babies. She slept the entire time, even with that cool gel. The ultrasound technicians said it would be nice if more babies were that calm. Below is a picture taken after they finished the test. We found out the result and everything is normal. On a side note, Dell Children’s Hospital is really well laid out.

When I set her in the crib after changing her diaper, so I can wash my hands, I’ve been setting her so she can look in her mirror and it keeps her happy.

I can tell she’s growing because the newborn clothing is getting too small, well mainly too short. See the below photo. She’s at the maximum length before it gets too short, although she still has a little ways to go before it gets too tight.

Jessica is such a happy baby. Very infrequently does she get really upset. Although she still doesn’t like baths. We’re hoping that will change.

Sometimes when we go on walks, she is awake and alert, watching the bugs hanging from the stroller/carrier handler. Other times, as seen in the below photo, she sleeps the entire walk.
