Aspen’s 1st Birthday Party

Our beautiful little niece turned one last Thursday. Her birthday celebration was held last Saturday around lunchtime. We had a blast and I think Aspen did too. Check out Julia’s post and Sarah’s post for more pictures.

When we arrived, Jason, Julia and some of their friends were putting last minute touches on the food. The lunch of kabobs, pasta salad and chips and salsa was delicious. I especially enjoyed the shrimp kabobs. Here’s Grant holding up one of the kabobs he threaded.

Aspen had a beach themed party. Don’t you like the little lanterns Julia picked up at Party City? You might remember that Julia and I had gotten together for lunch and shopping last week.

Of course, I had to get some photos of Papa with his grandkids. Although, somehow, I didn’t get a single picture of Cameron the entire party.

After lunch, Aspen opened her presents. She didn’t seem too interested in unwrapping the presents, except for the big one. Jessica was interested in that one as well and helped out.

Then came cake. At first, Aspen didn’t seem to know what to do with the cake. Then she started picking the blueberries off the whipped cream frosting.

A little later, they cut the cake in half with a spatula and then she really went to town.

Bella seemed excited about Aspen’s cake too. I guess she knew if she stuck around, she might get a little nibble.

Lori’s Pizza & Pie Birthday Party

Sunday afternoon, Amy hosted a pizza and pie birthday party for our friend Lori. The timing was perfect because Jessica woke up from her afternoon nap, I nursed her and then we left for the party, only arriving about 15 minutes late.

Lori is not the biggest cake fan, so Amy made an apple pie and a cherry pie for the party. I had a slice of the cherry pie and it was so delicious.

Of course, Heather brought some cupcakes and the kiddos (well, all the kiddos except Jessica) had fun with those. Don’t you love the frosting smiles cupcakes give kids?

Dessert for Aspen’s Baptism Party

You might remember saying I had made dessert for Aspen’s baptism party. Here’s the post about it.

The week before her baptism and party, Aspen had been teething and needing her mama. So Julia took me up on my offer to help with a dessert for the party. I couldn’t completey make up my mind what to make, so I made two desserts.

The first dessert I made was a recipe I had book-marked from the Pioneer Woman. I have enjoyed most everything I tried from her site. The cake was even better a few days later.

Ingredients:

  • 1 1/2 cups (3 sticks) butter
  • 3 cups sugar
  • 5 whole eggs
  • 1 teaspoon butter flavoring (I omitted since I didn’t have any)
  • 2 teaspoons lemon extract
  • 3 cups all-purpose flour
  • 1 cup Sprite, 7-Up, or Sierra Mist (I used 7-Up)

Directions:

Preheat oven to 325°F.

Cream butter. Add sugar, 1 cup at a time, mixing after each addition. Add egss, 1 at a time, mixing after each addition. Add butter and lemon extracts and mix well. Add flour, 1 cup at a time, mixing well after each addition. Add soft drink, then mix together until combined. Scrape sides of bow, then mix briefly.

Pour into a greased Bundt pan and bake for 1 hour to 1 hour 10 minutes, until the cake is no longer jiggly.

Remove cake from oven and invert pan until cake drops out. (I did not wait until it drops out and I had it break, so be patient.) Slice and chow down!

Yield: 12

I felt the second dessert needed to be chocolate flavored, so I browsed my cookbook collection and decided upon these Cookies ‘n’ Cream Brownies.

Cookies ‘n’ Cream Brownies

Ingredients – Cream Cheese Layer:

  • 1 8-oz. package cream cheese, softened
  • 1/4 cup sugar
  • 1 egg
  • 1/2 teaspoon vanilla extract

Ingredients – Brownie Layer:

  • 1/2 cup butter, melted
  • 1/2 cup sugar
  • 1/2 cup packed brown sugar
  • 1/2 cup baking cocoa (I used unsweetened cocoa)
  • 2 eggs
  • 1/2 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • 12 cream-filled chocolate sandwich cookies, crushed

Directions:

Preheat oven to 350°F. Grease a 11-in. x 7-in. x 2-in. baking pan (I used a glass baking pan).

In a small mixing bowl, beat the cream cheese, sugar, egg and vanilla until smooth; set aside. For brownie layer, combine butter, sugars and cocoa in a large mixing bowl; blend well. Add eggs, one at a time, beating well after each addition. Combine flour and baking powder; stir into the cocoa mixture. Stir in vanilla and cookie crumbs.

Pour into prepared pan. Spoon cream cheese mixture over batter; cut through batter with knife to swirl. Bake at 350°F for 25-30 minutes or until a toothpick inserted near the center comes out with moist crumbs. Cool completely.

Yield: 2 dozen

5th Annual Moore Family Christmas Party

This year’s Christmas party occurred on the afternoon of the 20th, a little later than years past. I thought I might need some extra time to prepare. It worked out great, since the cookie baking extravaganza was the weekend before our party and the girls let me take more of the cookies than they did, so I could stock the party buffet. And boy was it a well-stocked party buffet. Besides the 7 different kinds of cookies, we had steak and cheese empanadas (Costco), cocktail franks in a blanket (Costco), spinach florentine dip, queso, chips, veggie/fruit tray, cheese/cracker/summer sausage tray, rolls (Aric), Valdosta Nut Blend (snack mix containing pecans with sweet cranberrieds, black pepper and orange zest from Costco), pecan brittle (Kristy), and a Chocolate Mint Torte. Aric and Kristy came over early so Kristy could help me set up the buffet. We are truly blessed to have such good friends.

The turn out was really great. We had 23 adults and 9 kids, not counting ourselves, join us for the come-and-go festivities. It is so nice to get together and visit with family and friends. Jessica enjoyed the party, even though she was asleep for most of it; first on Stephanie’s shoulder and then on Evalyn’s shoulder. She wore her Christmas outfit and it was probably a bit warm, so that combined with the comfy shoulders made for a sleepy Jessica.

Second Baby Shower

On the 12th, my best friend Kristy hosted a baby shower for me at her house. It was a lot of fun. I enjoyed getting to see everyone.

Evalyn made a beautiful cake that had all the baby animals that are found in the bedding we picked out for the nursery. She is so talented.

We played three games. For the first game, we were given about 24 animals and what their babies are called and we had to match them up. Did you know that a baby turkey is called a poult? My sister won that game. Then we played a game with 10 diapers that had different kitchen condiments in them and you had to guess the condiment. Kristy used such condiments as vanilla, apricot jelly, soy sauce, minced garlic. It was definitely a game for your sense of smell. The final game was guess the pregnant woman’s girth. I stood in center of the room and everyone cut ribbon from a spool to indicate how big around I was. My co-worker Caroline guessed the closest. I think my Mom was the furthest off.
