2008 Christmas Celebration – Jennifer’s Family

The weekend before Christmas, we celebrated Christmas with my side of the family. My parents drove in from Midland and my sister Sarah and her little family drove in from the DFW metroplex to stay at my house and of course my brother and his wife, who live in Austin, came over to celebrate also.

Sarah, my Mom, and I prepared a big lunch Saturday that I had planned out the week before. The pinnacle of lunch was the Stuffed Crown Roast of Pork with sides of Candied Pecan Pear Salad, Apple Butternut Squash, the standard Green Bean Casserole, and rolls. The pork crown roast and stuffing was a breeze for me to make and turned out so impressive. The salad prepared by my Mom and Sarah was delicious. The apple butternut squash was tasty, but I don’t think it is something we will make again. I had planned to make Whole Wheat Rolls, but as I didn’t time it very well, we ended up going with these quick tasty rolls my Mom knew how to make.

Stuffed Crown Roast of Pork

Ingredients:

  • 1 pork crown roast (16 ribs and about 10 pounds)
  • 2 garlic cloves, slivered
  • 2 tablespoons olive oil
  • salt and pepper, to taste
  • 2 cups apple juice or cider
  • 1 cup raisins
  • 1 cup boiling water
  • 1 cup chopped onion
  • 1 cup chopped celery
  • 1 garlic clove, minced
  • ¾ cup butter
  • 5 cups soft bread crumbs
  • 3 cups chopped peeled tart apples
  • ¼ cup minced fresh parsley
  • 1 teaspoon salt
  • ¼ teaspoon paprika

Directions:

Cut slits in the bottom of each rib; insert garlic slivers. Rub oil over entire roast; sprinle with salt and pepper. Place in a shallow roasting pan. Cover rib ends with foil. Pour apple juice into pan. Bake, uncovered, at 350°F for 1 hour, basting occasionaly.

Meanwhile, for stuffing, place the raisins in a small bowl.; pour boiling water over raisins. Let stand for 2 minutes; drain and set aside. In a skillet, saute the onion, celery, and garlic in butter until tender. Add the bread crumbs, apples, parsley, salt, paprika, and raisins; mix well.

Carefully spoon stuffing into center of roast. Bake 1 to 1.5 hours more or until a meat thermometer reads 160°-170°F and juices run clear. Let stand for 10 minutes. Remove foil and stuffing. Cut between ribs.

Yield: 12-16 servings

Candied Pecan Pear Salad

Ingredients:

  • 1 teaspoon butter
  • ½ cup chopped pecans
  • 1¼ teaspoons sugar
  • ¼ teaspoon ground cinnamon
  • 1 cup pomegranate seeds, divided
  • ½ cup raspberry vinegar (we used red wine vinegar)
  • 1 tablespoon Dijon mustard (we used honey Dijon mustard)
  • 1 tablespoon honey (we used raspberry honey)
  • ¼ teaspoon salt
  • ⅛ teaspoon pepper
  • 1 cup olive oil
  • 1 large pear
  • 1 teaspoon lemon juice (we used lime juice)
  • 3 packages (5 ounces each) spring mix salad greens
  • ½ cup crumbled bleu cheese

Directions:

In a small heavy skillet, melt butter. Add pecans; cook over medium heat until toasted, about 4 minutes. Sprinkle with sugar and cinnamon; cook and stir for 2-4 minutes or until sugar is melted. Spread on foil to cool.

For dressing, in a blender, combine ½ cup pomegranate seeds, vinegar, mustard, honey, salt and pepper; cover and process until smooth. While processing, gradually add oil in a steady stream.

Cut pear into thin slices; sprinkle with lemon juice. In a salad bowl, combine the greens, pears, bleu cheese, and candied pecans. Drizzle with dressing and toss to coat. Sprinkle with remaining pomegranate seeds. Serve immediately.

Yield: 12 servings (1 cup each)

Apple Butternut Squash

Ingredients:

  • 1 medium butternut squash, peeled, seeded and cubed
  • ¼ cup apple butter
  • 1 tablespoon heavy whipping cream
  • ¼ teaspoon salt
  • ¼ teaspoon ground cinnamon

Directions:

Place squash in a large saucepan and cover with water; bring to a boil. Reduce heat; cover and simmer for 15-20 minutes or until tender. Drain.

In a large mixing bowl, mash squash with apple butter, cream, salt and cinnamon until blended.

Yield: 5 servings

Opening Presents

After lunch, we exchanged gifts. My family has the best tradition for opening presents. We start with the youngest, who this year was my sweet baby nephew, and then work our way to the oldest before repeating the cycle until there are no more gifts under the tree. This way, we get to see everyone open their gifts. And to me, watching people open the gifts you give them is almost better than getting gifts yourself. The only bad part of this tradition is when one or two people get more gifts than other people. That is why I always get each member of my family the same number of gifts, usually two, so even if one gift is minor, they have something to open up. Growing up, this event occurred Christmas Eve after going to mass or as we got older before midnight mass. Now, that my siblings and I are all married and starting to have families of our own, the when is bound to change often.

Trail of Lights

Saturday night, we visited the Trail of Lights. I’ve lived in Austin for six years now and this was the first time I’ve visited this free Austin tradition. The Trail of Lights is a 1.25 mile trail in Zilker Park decorated on each side with displays containing hundreds of lights. Each display has a theme, such as Disney characters, and is sponsored by local companies like Dell. There are concession stands, a little house where the kids can visit Santa, the Zilker Zephyr miniature train decked out with lights and the big Zilker Christmas tree, which consists of a tall center pole and strands of lights along wires radiating outward from the center pole to form a cone shaped tree. The Trail of Lights usually opens mid-December and continues through Dec. 23rd. It was quite crowded while we were there, so I would suggest going on a weeknight. All the lights were beautiful, but I especially enjoyed the nativity scene with the lighted camels.

Kristy’s 2008 Birthday

My friend Kristy’s birthday was October 8th. Since she works at AMD with my husband, I baked up a cake for him to take to the office.  Kristy likes angel food cake, but I didn’t  have quite enough eggs, so I baked a chiffon cake, which requires about a third less eggs. According to Kristy and James, the cake was a  gastronomic success, regardless of my cake leveling skills. If I make it again, I would use a bit more orange juice in the glaze.

Ingredients:

  • 2 cups all-purpose flour or 2 1/4 cups cake flour
  • 1 1/2 cups sugar
  • 3 teaspoons baking powder
  • 1 teaspoon salt
  • 3/4 cup cold water
  • 1/2 cup vegetable oil
  • 2 tablespoons grated orange peel
  • 7 large egg yolks (with all-purpose flour) or 5 large egg yolks (with cake flour)
  • 1 cup large egg whites (about 8 )
  • 1/2 teaspoon cream of tartar
  • Orange Glaze

Directions:

Move oven rack to lowest position. Preheat oven to 325°F.

Mix flour, sugar, baking powder and salt in large bowl. Beat in water, oil, orange peel and egg yolks with electic mixer on low speed until smooth.

With clean beaters, beat egg whites and cream of tartar in large bowl with electric mixer on high speed until stiff peaks form. Gradually pour egg yolk mixture over beaten egg whites, folding in with rubber spatula just until blended. Pour into ungreased angel food cake pan (tube pan), 10×4 inches.

Bake about 1 hour 15 minutes or until top springs back when touched lightly. Immediately turn pan upside down onto heatproof funnel or bottle. Let hang about 2 hours or until cake is completely cool. Loosen side of cake with knife or long metal spatula; remove from pan.

Spread Orange Glaze over top of cake, allowing some to drizzle down side.

Yield: 12 servings

Ingredients:

  • 1/3 cup butter or stick margarine
  • 2 cups powdered sugar
  • 1/2 teaspoon grated orange peel
  • 2 to 4 tablespoons orange juice

Directions:

Melt butter in 1 1/2-quart saucepan over low heat; remove from heat. Stir in powdered sugar and orange peel. Stir in orange juice, 1 tablespoon at a time, until smooth and consistency of thick syrup. Glazes one 12-cup bundt cake, 10-inch angle food or chiffon cake or top of an 8- or 9-inch layer cake.

I made her the following card using a Stamp Something sketch challenge. I’m really happy with how it turned out, maybe my best card yet. A great technique I used in making this card is the easy peasy bow embellishment. I then decided to decorate a paper mache box I had picked up at Hobby Lobby to match the card and house Kristy’s gift, a Stampin’ Up stamp set she had pointed out to me.

Operation Baking Gals Round 3: Team We’ll Eat Everything

Operation Baking GalsYes, I know I’m late in posting this. Yes, I know I forget to email Lauren of I’ll Eat You to tell her about what I baked. I’m a bad bad Baking Gal. On the flip side, yes, I did bake cookies and send them to sailor Eddie and his buddies, so I can’t be all bad. I put together a goodie box that included a recent edition of Texas Highways (what can I say, I found someone at work who didn’t want their copy), some goldfish crackers, mints, and a very full container of Lime Meltaway Cookies. I had been wanting to make these cookies since I read about them last June in one of the blogs I peruse (unfortunately I can’t remember which one). They were delicious, because I, of course, couldn’t make them for Eddie without saving some for my hubby and me. I hope Eddie and his buddies enjoyed them as much as we did. The cute little boot plate was given to me by brother and his fiancé at the time (now his wife) for Christmas last year. Aren’t they adorable? I have no idea where they got them, but according to the back of the plate they’re made by the Boston Warehouse Trading Corp. I tried to find them online for those of you who have addictions to cute plates like me, but no luck.

Oh, and I also made a card to include in the goodie box. This card is inspired Lexi Daly‘s simple style. I stamped the Stud Muffin twice, once on white cardstock and once on the card, cutting out everything but his tail and whiskers and then adhering the colored cut-out on top of the stamped Stud Muffin on the card giving his tail dimension (plus who can cut out that teeny tail).

Operation Baking Gals Round 2: Team Steph Chows

Operation Baking GalsI don’t completely remember how I came across Operation Baking Gals, maybe through Phe/Mom/enon, but as soon as I found out about it, I thought how cool is that. I have a great appreciation for our troops. They protect our country’s liberties and for that I am extremely grateful. So I signed up for Team Steph Chows, probably because I read that Lt. Eric Olson, our armed forces member, is a mechanical engineer, and well, I’m partial to engineers being that I’m an engineer.

In trying to organize my loose recipes, I came across a clipping from Good Housekeeping entitled Cookie Jar Classics. Looking through the article, there were some really delicious sounding cookies. I decided that I would make Chipperdoodles for Eric and his fellow troops. In addition to the cookies, I included lifesavers, chewing gum and some recent editions of Texas Highways (some co-workers don’t keep their copies).

The chipperdoodles were pretty easy to make. I actually doubled the recipe and instead of the expected 7 dozen, I got 10 dozen. I don’t know if I made the cookies smaller or what. It worked out though. Eric got 5 dozen and I had 5 dozen for my hubby who really enjoys Snickerdoodles and the friends we went and had dinner with Saturday night.

Ingredients:

  • 3 cups all-purpose flour
  • 2 teaspoons cream of tartar
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt (I actually omitted this since I used salted butter)
  • 1 cup butter (2 sticks), softened
  • 1 1/4 cups plus 3 tablespoons sugar
  • 1/2 teaspoon vanilla extract
  • 2 large eggs
  • 1 cup mini chocolate chips
  • 2 teaspoons ground cinnamon

Directions:

Preheat oven to 375°F.

On waxed paper, combine flour, cream of tartar, baking soda, and salt.

In large bowl, with mixer at medium speed, beat butter and 1 1/4 cups sugar until creamy, occasionally scraping bowl with rubber spatula. Beat in vanilla, then eggs, 1 at a time, beating well after each addition. At low speed, gradually add flour mixture; beat just until blended, occasionally scraping bowl. With spoon, stir in chocolate chips.

In a small bowl, combine cinnamon and remaining 3 tablespoons sugar. Shape dough by rounded measuring tablespoons into 1 1/2-inch balls. Roll each ball in cinnamon sugar.

Place balls, 2 inches apart, on ungreased large cookie sheet. With bottom of flat-bottom glass, flatten balls slightly to make 2-inch rounds. Bake cookies 13 to 15 minutes or until plate golden and firm. Transfer cookies to wire rack to cool.

Yield: 3.5 dozen cookies

Red, White & Blue Cupcakes

Sugar High Friday BerriesAbout a week and a half ago, I made these delicious Blueberry Cheesecake Cupcakes with Cherry Buttercream Frosting. They were inspired by this delicious recipe and were made for two blogging events. The theme for the Cupcake Hero July blog event was red, white, and blue cupcakes. It was hosted by Nikki and CB; however, I am too late posting for it. Although, I am not too late for Sugar High Friday hosted by Food Blogga and created by The Domestic Goddess. The Sugar High Friday #45 theme was a berry dessert. I am sneaking in just under the wire on this one.

And it trying to find all the appropriate links to put in this post, I came across Key Ingredient’s Cooks Kitchen blog event which also happened to be a berry-inspired recipe.

Taste tasters included my husband, James, and my friends, Ranger, Lori, and Evalyn. James said “they weren’t bad.” This is a pretty good compliment coming from him. Although, I think, he prefers the cupcakes that inspired these cupcakes.

Ingredients:

  • 1 1/2 cups blueberries, divided
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon plus 1/8 teaspoon salt
  • 3/4 cup sugar, divided
  • 1/3 cup vegetable oil
  • 2 large eggs, divided
  • 1 teaspoon vanilla extract
  • 5-6 drops blue food coloring, optional
  • 3/4 cup water
  • 2 3-oz. packages cream cheese, softened

Directions:

Preheat oven to 350°F. Grease or paper-line 16 muffin cups.

Using a blender or food processor, puree 1/2 cup blueberries. Set aside. Combine flour, baking soda, and 1/2 teaspoon salt in small bowl. Beat 1/2 cup sugar, oil, 1 egg, vanilla extract and blue food coloring in large mixing bowl until blended. Beat in pureed blueberries; gradually beat in flour mixture alternately with water (batter will be thin).

Beat cream cheese, 1/4 cup sugar, 1 egg and 1/8 teaspoon salt in small mixer bowl until creamy. Stir in 1 cup blueberries.

Spoon batter into prepared muffin cups, filling 1/2 full. Spoon filling by rounded tablespoon over batter. Spoon remaining batter over filling. Bake for 20 to 25 minutes or until wooden pick inserted in center comes out clean.

Yield: 16 cupcakes

Cherry Buttercream Frosting

Ingredients:

  • 3 cups confectioner’s sugar
  • 1/3 cup butter, softened
  • 1 to 3 tablespoons marischino cherry juice

Directions:

Mix confectioner’s sugar and butter in medium bowl with spoon or electric mixer on low speed. Stir in 1 tablespoon marischino cherry juice. Gradually beat in enough of remaining marischino cherry juice to make frostinig smooth and spreadable. If frosting is too thick, add more marischono cherry juice, a few drops at a time. If frosting becomes too thin, beat in a small amount of confectioner’s sugar.

Yield: enough for 16 cupcakes
